Quick weeknight Thai dinners
Comforting curries for slower evenings
Thai curries reheat well and often taste better the next day. A green curry with chicken and Thai eggplant, a red curry with beef, or a vegetable curry with tofu all make excellent make-ahead dinners. Serve with jasmine rice.

For a shared meal, aim for variety: one curry or soup, one stir-fry, one fresh salad or vegetable dish, and plenty of rice. Contrast textures and flavors so each dish complements the others. Finish with fresh fruit or mango sticky rice.
Plan ahead tips
Cook rice ahead
Day-old, refrigerated rice is ideal for fried rice.
Prep aromatics in batches
Mince garlic and slice shallots for two or three meals at once and refrigerate in sealed containers for a few days.
Mix sauces in jars
Pre-mix stir-fry sauces so weeknight cooking takes minutes.
